Green main course salad
Recipe with herb cheese Ruscello

Preparation time: 10-20 minutes
Type of courses: Main course dish

Ingredients for 4 persons:
100 gr. lamb’s lettuce
110 gr. (water) cress
1 sachet almong shavings (45 gr)
2 apples (e.g.  Granny Smith)
6 tablespoons (fresh) lemon juice
200 gr. herb cheese Ruscello (of one piece)
6 tablespoons walnut (tree) oil
salt en pepper
80 gr. alfalfa

Preparation method:
Wash the lamb’s lettuce and remove the carrots.
Grill the almond shavings golden brown in a dry frying pan.
Wash and cut the apples in 4 pieces and core the apple.
Cut the pieces in thin slices and sprinkle them with 2 tablespoons (fresh) lemon juice.
Cut the cheees in thin slices.
Knock a dressing of the oil and the residues of the (fresh) lemon juice.

Season with salt and pepper.
Mix all the ingredients and serve the salad in a dish.

Serving tips:
Delicious with fried small (new) potatoes.

Dry, Droe Steen, south african white wine.
